Catarratto is one of the most important indigenous grapes from the island of Sicily and the most widely planted. It is used in nearly every white blend on the island and produces a consistent, drinkable wine. Gebbia uses the less common biotype called Catarratto Bianco Lucido, which is known for making higher quality, elegant wines that are more complex, full of juicy acidity and pleasant minerality. The north and east facing vineyards on Monte Bonifato are over 650 meters above sea level on pure calcareous rock with a very thin, poor topsoil.
Winemaking
Grapes are harvested in mid-September, gently pressed, cold fermented at 57° F/13° C for 15 days, then simply aged for 4 months in concrete tanks.
