PIFFERI FAMILY

We are in Valdorcia, a UNESCO World Heritage Site since 2004, Spedaletto is a unique place, a medieval fortress that was used by pilgrims to find rest and protection on the way to Rome: Via Frangigena. The Pifferi family has been working many hectares of wheat and olive trees for decades, they usually produce few wine for their home consumption. Now they dedicate their traditional wine making tradition to the production of Sangiovese-based Orcia DOC wine.

Philosophy

It is increasingly rare to find a complete farm such as Castello di Spedaletto: wheat, olive trees, vineyards, animals. Such a profound knowledge of soils, weather conditions, and seasonal trends ensure that there is always respect for the vineyard. Very few treatments, only those necessary. The younger generations are slowly gaining more and more decision-making power, it is clear from the choice to focus on the traditional Sangivoese in purity and abandon the Cabernet Sauvignon and Merlot. The wine ages in large Slavonian oak barrels for a year and then rests for a long time in the bottle.
